1 can black eye
peas (drained), sweet onion, fresh parsley, fresh cilantro, fresh red bell pepper, garlic salt, 1/8 tsp of cumin and chili
pepper, rice wine vinegar 2 tablespoon, 2 table spoon red wine vinegar (again vinegar is to taste), 1/2 tsp of sugar, interior
of celery stalk (3 small stalks with the green stuff), for the brave (1/8 tsp fresh garlic). 2 Tablespoon of olive oil.
Fresh ground black pepper. Two table spoons of minced bacon. Best
to let sit over night in refrigerator (brings the full flavor out).
